Here are some links regarding starting up a Mac from a software RAID:

This one explains that Mac OS X v.10.1.x can not start up from a software RAID. It also mentions 10.2 Server but does *not* say that this functionality has been added.

This one explains that any Mac with a New World ROM can not be booted from a software RAID. The Blue and White G3 I have and the Sawtooth G4 also in discussion are both New World ROM Macs.

Hope that helps clear up some things.

There isn't any documentation on Apple's Knowledge Base that states a Mac can boot from a software RAID. Likewise third party RAID solutions such as SoftRAID and FWB's RAIDToolKit do not allow you to boot from a software RAID either.

FWB bought RAIDToolKit from someone else I used to be called NXRAID I think. FWB's page doesn't say anything about booting from a software RAID one way or the other but the old product page did, I was unable to find a cached copy of their documentation on Google.

SoftRAID's page states it in their FAQ under requirements.
