I've found that SoundJam MP works flawlessly at ripping CDs. Drop in the disk, tell SoundJam to rip it and then eject the disk to let you know it's done.
I've got a hacked version of iTunes v.1 running on this machine. I've not ripped any tracks with it, though, so I can't comment.
If you're having such troubles with iTunes, I'd recommend that you try something else. There's no reason to put up with an application that essentially doesn't work as it should.

Peter I came late to this thread, but wonder if you have assigned enough memory to iTunes. And if it requires freespace on the hard drive do y7ou have enough? Probably on the booted partition.
