You can always just select a volume and use the Finder's File->Eject volume menu command (or Command-E) if dragging to the trash is uncomfortable to you. Or, in Panther, just click on the Eject symbol next to the volume in a Finder window Sidebar.

In OS X, the moment you start dragging a disk icon around the desktop you'll see the trash icon change to an eject icon.


You can also control-click or right-click and choose "Eject". Or, if it's a CD, press the eject key on the keyboard.

If anyone is looking for a good book on using MacOS X, I highly recommend "Mac OS X: The Missing Manual" by David Pogue. It even has a chapter to help Windows users find their way around.
