We don't eat much seafood here. That's a real shame, good seafood is first
class food. Tastes good and is good for both body and soul. 

I make paella every now and then, but I'm not able to find much seafood
besides prawns. To make it taste of sea, I make a bouillon out of the prawn
shells, and boil it in this bouillon. Adds a strong taste of ocean :-)

BTW, crayfish have claws, but what we in W.A. call crayfish are the
local Western Rock Lobster that don't have any.
