I've been at this for going on 19 years now. Use Retrospect, and if you can afford it, an Ecrix VXA-1 or VXA-2 tape drive. They make them firewire now, they are fast, and the tapes, depending on the tape drive, are HUGE....meaning they hold a LOT. 33/66 gb per itty-bitty tape cartridge. I back up a 3 drive server, with 25 users, onto 2 and a half tapes.
Then, cuz I believe in lots of lifeboats....I use a firewire external drive, and Mr. Bombich's free Carbon Copy Cloner, to do a mirror image of my Mac OS X machine. THAT way, you have both a Finder friendly and automated restore function, AND a tape backup. (I don't trust tape beyond 2-3 years.....used to work in the music recording studio industry and watched too many tapes have problems).
By the way, I also use this CCC image method to deploy standard configurations. It makes it REAL easy to pull a machine onto the bench, back up the users home directory of files, reformat the drive, check memory and drive platter, then image the hard drive from a pocket 20gb firewire startup standard setup drive. The only thing left after that is to copy the home directory back....and good to go.


Also, keep an eye out for Phillips new blue laser DVD reader/writer due, hopefully, at last word, sometime this Summer. (riiiiiight). Then back up to one of those little angels!!!
