I mentally picture the pork 100% wrapped in foil, or no exposed meat
at all.  Is that correct?  If so to brown that you will need to raise
the temp in cooking to 350-450.  Now is this pan going in the oven or
on top of the range?

Why not back up here and go over "Roasting 101"
1) You do not have to brown your meat to start.
2) There is a general min per pound @ a temp rule that varies on ovens
and doneness for people.

Base line in the sand is 350 degree F 20 min per pound = med to med
well.  Pork, chicken should only be cooked to Med well and removed
from heat source and let stand if in a roast or whole chicken.  So a
4# whole chicken @ .89 /# will cook for hour and a 1/4  and stand for
5 min before eating when cooked at 350. It just works.  Skin will be
moist or dry depending on the cooking space used.  If you did this in
a dutch oven in an oven the moisture level would be high and the
carmelization of the skin would be minor.  Just put the same chicken
whole on a soda/beer can in the oven and season salt the skin A LOT
your browning would be much greater.  Same time and same temp.

Pork runs the same way in time to cook in the oven like this.

Some people will brown the meat before it goes into the oven.  Extra
work and not sure your get much in flavor out of it in the end.

Others will reuse the juices and make a sauce / gravy to accompany the
meal.  That would be me.  :)
