Hi Luke and all, I am over speaking at RailsConf at the moment, and I bought this up with several people here (vendors) about hosting a RailsConf in Australia.... funny that this thread should come up at the same time.
So yes, there is definitely interest to send people over, and yes, I can help out organising it.
