First comment: I doubt that 2000 CDs are going to fit into 500GB in
FLAC format. My FLAC library is about 1150 CDs and occupies around
335GB.

You only want to do this once, and get it right. As others have noted,
make sure you use a trustworthy ripper so you can be sure of good rips.
EAC is the obvious generic choice, but if you've got a Plextor drive
then Plextools is a better ripper. It is faster than EAC in secure
mode, and if you have any discs with uncorrectable errors it can switch
on the drive's excellent error concealment mechanism - I've never found
a way to switch it on from EAC.
