The "simplest" way in terms of hardware would be something like 'this'

but sounds like you have that covered.

Would second Audacity, but you may also want to look at "Rip Vinyl" -
very straightforward, and the help is excellent on things like how to
get the best connection/source (you have to pay for the full program -
UKĀ£7.50).

Good luck.  I will not tell you how much rum and coffee got drunk in my
house when it came to ripping two vinyl collections acquired over 30
years or so (and that was after the 800 cds)...

Is definitely worth it though, although I'm not an audiophile by any
means, the sounds is significantly less harsh and nicer to listen to
than their counterparts on CD - too much compression and mastering in
the later versions.
