This has become somewhat of a major hobby for me over the last few years. So much so that I actually only buy used records now, I haven't bought a CD in ages. Anyway, I use the following hardware & software combination and get terrific results with the least amount of effort.
Any good quality turntable and pre-amp will do nicely. I connect to an external sound card (Edirol UA-1X, there's a newer model, see the Edirol web site, it's very inexpensive and works great!) If you're on Windows take a look at Wave Corrector (http://www.wavecor.co.uk/) it's the best money I ever spent on a piece of software. It will record, track split and clean up vinyl and tape. It now supports direct FLAC output. I then use MusicBrainz.org and Picard to tag against the online database. This last step is optional but is important to me. Good luck and good ripping!
