Wow!  Thanks to everyone for the really detailed, and well thought out
responses!

I really appreciate everyone's input.  There are some really good
suggestions - both for software and hardware that will take me some
time to sort out.  One of the things I hadn't considered was a USB
audio card.  At the time I bought the SB Audigy, such things didn't
really exist - at least not that I recall as having any sort of
audiophile quality...

I hadn't heard of Audacity either - but after a quick review of their
wiki, its safe to say that I plan to get a bit more familiar with it.

The biggest question I have in terms of digitizing, is how to make sure
that I maximize the recording level while insuring that there is NO
clipping at all?  Offhand, I would guess the answer goes something like
make sure I find the loudest portion of the album, and set the levels
accordingly, being sure not to clip, and then once set, record the
side.  (Much like we did back in the day with audio cassettes, but they
were a bit more forgiving, being analog rather than digital).

I mentioned both Ubuntu and Windows in my original post, and I use
both.  My server is Ubuntu, as is my wife's pc (which has the Audigy
card in it).  For any of my current ripping, I'm using an older
off-lease pc with XP, and either EAC or dbPowerAmp, depending on the
CD.  I'm using Samba on the Ubuntu server to create a network drive
used by my Windows pc for access.  Pretty handy way of transferring and
accessing files!

As for the other software and links provided - thanks to all, in
particular Rob and Clive. You've both put a significant effort into
documenting your work - wow!  

Clive - I bookmarked a link years ago that provided what seemed like
the "ultimate" reference for digitizing LPs, but I've long since lost
the bookmark.  Much of what you've written looks very similar - so much
so that I wouldn't be surprised if you told me you were responsible for
the original article!  You've certainly incorporated a wealth of
information, and for anyone else coming across this thread, I would
recommend you read the page Cliveb's put together.

Rob, I haven't had the time to go through your wiki in detail, but I'd
also recommend it as a great reference for anyone looking to get
started with this process.

Again, I appreciate everyone's feedback, and as time permits I'll
follow up on the advice provided.  At some point, I hope to let people
know how I've made out - and more likely than not, I'll be back asking
for more advice.

P.S.  I haven't heard FZ's Wazoo, but it sounds like something I should
look into. :-)   Also - after sobering up and reading my original post,
it appears that I should lock up or hide my keyboard before the beer
