A quick-and-dirty solution would be the 'Griffin iMic' (http://www.griffintechnology.com/products/imic) - which now comes with an adapter for a pair of RCA inputs, and the RIAA characteristic implemented in software. Limited to (I believe) 48kHz, 16bits - but probably quite good for all that.
