This utility relies on the fact that many receivers can understand the
AC3 and DTS formats natively; when we send files in that format
(suitable encapsulated) they can be decoded.  Receivers generally don't
know how to decode the format used by DVD-A, as far as I know.  (If
that's changed, it would be interesting to hear about it.)  My
understanding is that the format requires larger bandwidth than the
digital (optical/coax) connection can provide, so the player must send
the audio as analogue channels over separate cables.  (I imagine that
HDMI can carry the digital signal, but again that's no good to the
Squeezebox owner).

So you can't do it in the same way, no.  If you want multichannel sound
you'll need to buy an AC3 or DTS encoder and somehow transform the data
from the DVD-A, but I'm afraid I don't know how to do it nor if it's
even feasible.  There will be some quality loss also.

Converted DTS/AC3 files should NOT be played in systems that don't
understand the formats (including PCs, portable audio players and
analogue-output-only devices like the Squeezebox Radio).  You'll just
get noise, and if it's turned up loud it could damage something.

Hopefully somebody here has experience with DVD-A and can offer some
more useful advice.
