The difference is the supply /demand equation is much better in HO. Athearn
might list a new caboose for $69.68 but there are tons of them on ebay for
$16.59 right now. BLMA makes a great new 64 ft. trinity reefer that sells for
$22.95 and can't be had at any price in S scale.
There's no way S is gonna win the pricing or availability war with HO so
trying to justify S pricing is a waste of time. Folks will model in S simply
because they like the size better and are willing to spend the money and make
