Amish Peanut Butter Cream Pie


   3/4  cup   Powdered sugar
 1/2  cup   Smooth peanut butter
   1  cup   Sugar -- divided
   3  cups  Milk -- divided
   3Eggs -- separated
   6  tablespoons   Cornstarch -- divided
   3  tablespoons   Flour
 1/4  teaspoon  -Salt
   2  tablespoons   Butter
   2  teaspoons Vanilla -- divided
   1Pie shell -- baked
 1/4  teaspoon  Cream of tartar

Beat together the powdered sugar and peanut butter until the mixture is
crumbly; set aside. In a large, heavy saucepan, combine 2/3 c sugar and 2
cup milk;
heat to scalding or until bubbles start to form on the bottom.
Do not let it boil.  Meanwhile, in a medium bowl, beat the egg yolks to mix;
blend in 3 T cornstarch, flour and salt. Stir to make a paste. Whisk in the
remaining 1 cup cold milk, whisking until the mixture is smooth. Pour in
some of the hot milk mixture,
 stirring to combine. Add mixture in bowl to the milk in the saucepan.
 Cook over medium-low heat, stirring constantly, until the mixture bubbles
up in the center. Add the butter and 1 t vanilla. Remove from heat and let
custard cool.

 Preheat oven to 350 degrees.
 Sprinkle 2/3 of the crumbly peanut butter mixture in the bottom of the
baked (and cooled) pastry shell. Pour the cooled custard mixture over the
top.
In a large mixer bowl, place the egg whites, cream of tartar and remaining 1
teaspoon vanilla. Beat until stiff peaks form. Gradually, while beating, add
the 4 tablespoons
 remaining sugar and 3 T remaining cornstarch. Continue beating until whites
are very think and glossy. Spread on top of pie; sprinkle the remaining
peanut butter mixture on top. Bake for 10 to 15 minutes; watching carefully,
or until the meringue is golden brown. Cool.

Italian Style Macaroni
2 cups tomato juice
1 cup chicken broth
2 tablespoons onion finely chopped
1 garlic clove minced
1 teaspoon dried Italian seasoning
   salt and pepper to taste
2 cups elbow macaroni cooked
1 cup parmesan cheese shredded

In a medium saucepan, combine tomato juice, broth, onion, garlic and
seasonings.
Cook over low heat, uncovered, for about 25 minutes or until reduced by
half.  Stir
tomato sauce into cooked macaroni.  Spoon into baking dish.  Sprinkle with
cheese.
Bake in preheated 375ºF for about 25 minutes.

Spiced Pumpkin Fudge
2 cups granulated sugar
1 cup packed light brown sugar
3/4 cup (1 1/2 sticks) butter or margarine
2/3 cup (5 ounce can) NESTLÉ® CARNATION® Evaporated Milk
1/2 cup LIBBY'S® 100% Pure Pumpkin
2 teaspoons pumpkin pie spice
2 cups (12 ounce package) NESTLÉ® TOLL HOUSE® Premier White
Morsels
1 (7-ounce) jar marshmallow crème
1 cup chopped pecans
1 1/2 teaspoons vanilla extract 
LINE 13 x 9-inch baking pan with foil. 
COMBINE sugar, brown sugar, evaporated milk, pumpkin, butter and spice
in medium, heavy-duty saucepan. Bring to a full rolling boil over medium
heat, stirring constantly. Boil, stirring constantly, for 10 to 12
minutes or until candy thermometer reaches 234° to 240º F (soft-ball
stage). 
QUICKLY STIR in morsels, marshmallow crème, nuts and vanilla extract.
Stir vigoriously for 1 minute or until morsels are melted. Immediately
pour into prepared pan. Let stand on wire rack for 2 hours or until
completely cooled. Refrigerate tightly covered. To cut, lift from pan;
remove foil. Cut into 1-inch pieces. Makes about 3 pounds.

Stuffed Eggplant

Serves 4.

2 medium eggplant
2 tbsp butter
1 lb. ground beef
1 small onion, chopped
1 small red bell pepper, diced
2 garlic cloves, minced
1/3 c. Italian flavored breadcrumbs
1 tsp salt
1/2 c. grated Parmesan cheese
Nonstick cooking spray

Preheat oven to dg350.

Cut eggplant in half lengthwise.  Scoop out center leaving a 1/2 inch boarder.

Dice meat from center of eggplant; set aside.

In large skillet over medium heat, melt butter.  Add diced eggplant,
ground beef, onion, bell pepper and garlic; sautae 5-7 minutes, or
until beef is brown and vegetables are tender.  Remove from heat and
stir in breadcrumbs and salt.  Place eggplant shells on a rimmed
baking sheet and fill with equal amounts of breadcrumb mixture.
Sprinkle with cheese, then coat with nonstick cooking spray.  Bake for
1 hour to 1 hour 10 minutes, or until eggplant shells are tender.

2 c. flour
2 tsp baking powder
1 tsp salt
2 tsp pumpkin pie spice
1 c. raisins, optional

Beat eggs until frothy.  Add sugar and beat two minutes.  Beat in oil
and pumpkin.

Sift together dry ingredients.  over raisins, if you are adding them.
Fold into egg mixture.  Pour into greased 9- by 13-inch pan and bake
at dg350 for 30 to 40 minutes.

Serving suggestions:  Sprinkle with powdered sugar or frost with
orange or cream cheese frosting.

3 c. blueberries
2 tbsp lemon juice
1/2 c. sugar
1/4 tsp cinnamon
1/8 tsp nutmeg

Topping:
1 c. flour
2 tbsp sugar
1-1/2 tsp double acting baking powder
1/4 c. margarine
1/2 c. milk
1 egg, slightly beaten

Preheat oven to dg375.

In 8-inch square baking dish combine blueberries, lemon juice, sugar,
cinnamon and nutmeg.  Bake 5 minutes; remove from oven.

Increase temperature to dg425.

Topping:  Meanwhile, in mixing bowl combine flour, sugar and baking
powder.With pastry blender, cut in margarine.  Combine milk and egg.
Mix into dry ingredients just until moistened.  Spread over hot
berries.  Bake for 20 minutes.  Serve warm.

Yield 6 servings.

1 tsp. Baking soda 
1 c. Butter or margarine, softened 
1/4 c. Sugar 
3/4 c. Brown sugar 
1 (4 oz.) pkg. Instant pudding vanilla or chocolate) 1 tsp. Vanilla 
2 eggs 
1 (12 oz.) pkg. Chocolate chips 
Mix flour and baking soda; set aside. Combine butter, sugar, pudding mix
and vanilla in large bowl; beat until smooth and creamy. Beat in eggs.
Gradually add flour mixture, stir in chips, (batter will be stiff). Drop
by rounded teaspoonfuls onto ungreased baking sheet about 2 inches
apart. Bake at 375 degrees for 8 to 10 minutes.

have also cooked this in the oven for 30 minutes at 350 degrees. Makes 4

Easy Peanut Butter Chocolate Fudge 
1 Package Peanut butter flavored chips (12-ounce) 1 Can Eagle Brand
Sweetened Condensed Milk (14-ounce) (Not evaporated) 
1/4 Cup Butter or margarine 
1/2 Cup Chopped peanuts, optional 
1 Package Semi-sweet chocolate morsels (6-ounce) Makes about 2 pounds 
In a large saucepan, melt peanut butter chips, 1 cup sweetened condensed
milk and 2 tablespoons butter; stir occasionally. Remove from heat; stir
in peanuts. Spread mixture into waxed paper-lined 8-inch square pan. In
a small saucepan, melt chocolate morsels, remaining sweetened condensed
milk and butter. Spread chocolate mixture on top of peanut butter
mixture. Chill two hours or until firm. Turn fudge onto cutting board;
peel off paper and cut into squares. Tightly cover any leftovers.

Bring Karo and sugar to a boil. Remove from heat and stir in peanut
butter and stir until dissolved. Add cereal and stir until mixture is
well coated. It will probably take only 1/2 box of cereal. Pour up in
buttered pan or drop by spoon on wax paper.

6 rib or loin pork chops, 3/4" thick 
2 (10 oz.) pkgs. Frozen cut green beans, defrosted 2 cans cream of
celery soup 
1 c. Milk 
1/4 tsp. Salt 
Brown chops, season with salt and pepper. Mix together beans, soups,
milk and 1/4 teaspoon salt. Pour mixture into a 2 quart baking dish.
Arrange pork chops on top. Cover and bake in 350 degree oven for 45
minutes or until meat is done. .

1 can cream style corn 
1/2 cup chopped onion 
1 small can green Chiles 
1 cup grated Velveeta cheese 
1/2 stick butter 
Salt and pepper to taste 
1 egg, beaten 
1 cup crushed corn flakes 
Slice and cook squash in medium sized sauce pan over medium high heat
until slightly tender; about 10 minutes. Drain the liquid from the pan
and add the cream corn, green Chiles, 1/2 of the cheese, 1/2 of corn
flakes and 2 tablespoons of butter. Stir. Pour into greased casserole
dish and top with remaining cheese, corn flakes and 
Drizzle with butter. Bake at 350F for 30 to 45 minutes.

1 (1-1/4 oz.) pkg. Taco seasoning 
1 (15 oz.) can tomato sauce 
3 c. Cooked macaroni 
1 c. Shredded cheddar cheese 
1/4 c. Parmesan cheese 
1 (8 oz.) sour cream 
Brown beef; drain, stir in seasoning mix, tomato sauce, bring to a boil
and remove from heat. Combine cooked add drained macaroni; 1/2 cup
cheddar cheese and sour cream. Place on bottom of 13"x10" dish. Top with
meat mixture and remaining cheese. Sprinkle Parmesan cheese on top and
bake at 350 degrees for 30 minutes.

Oatmeal Cake

Preheat oven to dg350.

1 c. oats
1-1/4 c. boiling water.
1 stick margarine
1 c. brown sugar
2 eggs, beaten
1 c. white sugar
1 tsp vanilla
1-1/3 c. flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg

Pour water over oats.  Let stand 20 minutes.

Cream margarine with sugars and mix with oatmeal.  Add eggs and
vanilla.  Sift dry ingredients and add to above mixture.  (Batter will
be thin.)  Bake for 1 hour to 1-1/4 hours.  Let cool 15 minutes before
removing from loaf pan.

Can also be baked in three small loaf pans to cut baking time down to
about 40 minutes.

Combine first 4 ingredients.  Mix next five ingredients.  Add to
pumpkin mixture.  Combine baking soda and milk.  Add to pumpkin
mixture.  Add remaining ingredients; mix well.  Drop by teaspoonfuls
onto lightly greased cookie sheet.  Bake at dg375 for 10 to 12
minutes.

1 1/2 cups flaked sweetened coconut 
18 ounces milk chocolate, finely chopped 
12 ounces semisweet chocolate, finely chopped 
1 (1-ounce) squares unsweetened chocolate, finely chopped 
2 teaspoons vanilla extract 
1 (7-ounce) jar marshmallow creme 
1/2 cup chopped pecans 
1/2 cup chopped blanched almonds, toasted 
1/2 cup hazelnuts, toasted, skinned and chopped 
1/2 cup chopped dates 
1/2 cup raisins 
1/2 cup dried figs, chopped 
1/2 cup candied pineapple, diced 
1/2 cup read and green candied cherries, chopped 
4 1/2 cups granulated sugar 
1 (12-ounce) can evaporated milk 
1/4 cup butter 
1/2 teaspoon salt 
Sprinkle coconut into a generously buttered 18 x 12 x 1-inch jelly roll
pan; press coconut lightly into butter. Chill. 
Combine milk chocolate and the next 3 ingredients in a large bowl. Add
marshmallow creme and stir well. Add nuts, dried fruit and candied
fruit; stir well. (Mixture will be very thick.) Set aside. 
Combine sugar, evaporated milk, butter, and salt in a large sauce pan;
stir well. Cook over medium heat until mixture reaches soft ball stage
or candy thermometer register 238*F (115*C), stirring occasionally.
Remove from heat, and pour over reserved chocolate mixture, stirring
until chocolate and marshmallow creme melt. 
Pour into prepared pan; spread evenly. Cool completely. Cut into small
squares. 
Makes about 7 pounds.

1-1/2 c. sliced onion
1 garlic clove, minced
3 tbsp margarine
1 lb. zucchini, sliced
1/2 lb. fresh spinach, chopped
6 c. chicken broth
1/2 c. long grain brown rice
1/4 tsp pepper

In large skillet, saute onion and garlic in margarine 3 to 5 minutes
until translucent.  Stir in zucchini.  Cook over moderate heat,
stirring constantly, 4 to 5 minutes.  Add spinach, cooking and
stirring, until wilted.  Set aside.

Bring broth to boil.  Stir in rice.  Cover and cook over low heat
about 40 minutes, until rice is tender.  Stir in vegetables and
pepper.

Yield 8 servings.

A super easy, super delicious cake!
Strawberries & Soda Pop Cake
1 (18.25-ounce) package white cake mix 
1 (12-ounce) can strawberry soda 
1 (6-serving size) package strawberry gelatin
1 (16-ounce) package frozen strawberries 
  
Frosting: 
1 (8-ounce) container non-dairy whipped topping
1 cup milk 
1 (4-serving size) package instant vanilla pudding 
Prepare and bake cake as directed on package in a 13 x 9-inch baking
pan. 
While cake is still warm, poke holes with the end of a wooden spoon over
the entire surface about 1-inch apart. 
In saucepan, bring to a boil the strawberry soda, gelatin and
strawberries. Pour over the cake and allow to cool completely. Once cake
has cooled, frost and keep refrigerated until ready to serve. 
Makes 12 servings

A yummy cake that is fun and easy to make thanks to the convenience of
packaged foods! This cake requires at least 8 hours refrigeration, so
plan ahead.
No-Bake Lemon Mousse Cake
Mousse Frosting and Filling: 
1 (14-ounce) can sweetened condensed milk (not evaporated milk) 
1 (6-ounce) can frozen lemonade concentrate, thawed 
Several drops yellow food color (optional) 
1 (12-ounce) container frozen whipped topping, thawed 
  
Cake: 
1 (10.75-ounce) package frozen pound cake 
Lightly grease or coat an 8 or 9-inch springform pan with nonstick
spray. 
For the Mousse: Place condenses milk, lemonade and food color, if using,
in a large bowl and mix well. Add a heaping spoonful of whipped topping
and stir until blended. Gently fold in remaining whipped topping. 
Cut pound cake in half, then cut each half in half. Continue until there
are 16 slices. Cut each slice in half diagonally to from 32 triangles.
Fit half the triangles over bottom of prepared springform pan to cover
almost completely. 
Reserve 2/3 cup mousse, cover and refrigerate. 
Spread half of the remaining mousse evenly on the bottom cake triangles
layer. Top with another layer with the remaining cake triangles and the
remaining half of the mousse. Cover and refrigerate for 8 hours or
overnight. (Can be made up to 3 days early.) 
About 2 hours before serving, remove sides of pan and place cake, with
the pan bottom, on a serving plate. Frost sides of cake with the
reserved 2/3 cup mousse. 
Makes 12 servings.
Nutritional Facts Per Serving: 336 cal, 4 g protein, 46 g carbohydrates,
0 g fiber, 15 g fat (11 g saturate fat), 40 mg cholesterol, 143 mg
sodium.

An impressive, light-as-air dessert that is sure to please family and
friends with its sensational melt-in-the-mouth texture. Maximize the
pleasure with a simple, lightly sweetened, fresh fruit sauce spooned
atop individual servings.
Merry Meringue Cake
4 large eggs, separated 
1/2 teaspoon cream of tartar 
1 1/4 cups granulated sugar, divided use
1/2 cup butter, softened 
1 cup all-purpose flour 
1 teaspoon baking powder 
1/4 teaspoon salt 
1/4 cup milk 
2 teaspoons grated lemon peel 
1 tablespoon lemon juice 
Preheat oven to 350ºF. 
In medium mixing bowl, beat egg whites with cream of tartar at high
speed until foamy. Add 3/4 cup of the sugar, 2 tablespoons at a time,
beating constantly until sugar is dissolved and whites are glossy and
stand in soft peaks. Set aside. 
In large mixing bowl, beat together butter and remaining sugar at medium
speed until light and fluffy. Add egg yolks and beat until thoroughly
blended. In small bowl, stir together flour, baking powder, and salt.
Add to batter alternately with milk, blending well after each addition.
Beat in lemon peel and juice. 
Pour into 2 (8 x 1 1/2-inch round) cake pans lined on bottom with waxed
paper. Spread reserved meringue over batter in each pan, gently
smoothing tops. 
Bake for 25 minutes. Turn off oven. Let stand in oven 5 minutes. Cool on
wire racks. To serve, stack layers on serving plate or platter. 
Makes 8 servings.

Cocoa Cream Cake with Raspberry Balsamic Sauce
4 large eggs, separated 
1/4 teaspoon cream of tartar 
1/2 cup plus 2 tablespoons granulated sugar, divided use 
1/2 cup all-purpose flour 
1 teaspoon vanilla extract 
1/8 teaspoon salt 
1/3 cup whipping cream 
1/4 cup Milk Chocolate NESTLÉ® CARNATION® Hot Cocoa Mix 
8 ounces frozen raspberries 
2 tablespoons balsamic vinegar 
Preheat oven to 400° F (375° F if using a glass baking dish). Butter
and flour a 13 x 9-inch baking dish. 
Place egg whites and cream of tartar in large mixer bowl. Beat until
foamy. While beating, slowly add 1/4 cup sugar; beat until soft peaks
form. Sprinkle flour over egg white mixture. 
Place egg yolks and 1/4 cup sugar in small mixer bowl. Beat until thick
and lemon-yellow in color. Beat in vanilla extract and salt, then gently
fold mixture into egg white mixture just until blended. Spread evenly
into prepared pan. 
Bake for 15 to 16 minutes or until golden brown. Immediately loosen the
cake from the pan and turn onto a clean towel. Carefully roll up cake
and towel together, starting with long side. Cool completely on wire
rack. 
Beat cream in small mixer bowl until stiff peaks form; stir in cocoa
mix. Place raspberries, vinegar and 2 tablespoons sugar in small
saucepan. Cook over medium heat, stirring occasionally, for 5 to 6
minutes or until mixture has thickened. Carefully unroll cake; remove
towel. 
Spread cocoa cream mixture over cake; reroll cake. Place on serving
dish. Refrigerate until ready to serve. Serve with warmed
raspberry-balsamic sauce. 
Makes 10 servings.

Grilled chops are basted with the same flavorful coconut-orange mixture
in which the spinach braises. Serve with hot cooked rice and warm flour
tortillas.
Orange Coconut Chops
4 pork chops, 1-inch thick
1/2 cup flaked coconut
1/2 cup orange juice
1 teaspoon salt
1/8 teaspoon hot pepper sauce
1 pound fresh spinach, cleaned, stems removed, coarsely chopped
4 tablespoons toasted coconut 
Place coconut and orange juice in blender or food processor. Blend until
nearly smooth. Strain, pressing liquid from solids; discard solids. Add
salt and hot pepper sauce to orange juice mixture; divide in half and
reserve. 
Prepare medium-hot coals in covered kettle style grill. 
Meanwhile place spinach in large skillet; drizzle with half of orange
juice mixture; cover and simmer 1 to 2 minutes, until spinach is wilted.
Set aside and keep warm. 
Grill chops for 12 to 15 minutes, turning once and basting with
remaining half of orange juice mixture. 
Divide steamed spinach among 4 plates; top each with a chop and garnish
with toasted coconut. 
Serves 4.
Wine suggestion: Serve with a chilled Riesling.

The tangy flavor of green peppercorns distinguishes the creamy sauce for
this tender steak. You can buy the peppercorns canned (packed in salt
water or vinegar) or dried; the recipe works well with either kind,
though the canned type will be slightly softer. Steak with Green
Peppercorn Sauce 
1 1/2 to 2 pounds tender boneless beef steak, cut 1 to 1 1/2-inches
thick 
1 tablespoon butter or margarine
1 tablespoon olive or vegetable oil
6 tablespoons brandy, warmed
1/4 to 1/2 cup minced shallots 
1 to 2 tablespoons canned green peppercorns, rinsed and drained; or 1 to
2 tablespoons dried green peppercorns 
3/4 cup whipping cream or creme fraiche
1 tablespoon Dijon mustard
1 tablespoon dry tarragon
Salt and ground black pepper 
Trim fat from steak or score fat to prevent meat from curling as it
cooks 
Melt butter in oil in a wide frying pan over medium-high heat. add meat
and cook, turning once, until well browned on both sides and done to
your liking; cut to test (6 to 8 minutes for rare). Move pan into an
open area, away from exhaust fans and flammable items. Add brandy and
ignite; shake or tilt pan until flame dies. Transfer meat to a serving
dish and keep warm. 
Add shallots to pan; cook over high heat, stirring, until shallots are
soft, about 2 to 3 minutes. Add peppercorns, cream, mustard and
tarragon. Bring to a boil; boil, stirring, until large, shiny bubbles
form and sauce is slightly thickened, about 3 to 4 minutes. Stir in any
accumulated meat juices from serving dish. Season with salt and pepper;
pour over meat. 
Makes 4 to 6 servings 
     The French version of fresh,
heavy cream, it's thicker and more tart. Delicious spooned over fresh
fruit or other desserts such as warm cobblers or puddings. It is the
ideal addition for sauces or soups because it can be boiled without
curdling. Creme Fraiche 
1 cup heavy cream
2 tablespoons buttermilk 
Place the cream and buttermilk in a glass container. Let stand,
uncovered at room temperature for 24 hours, or until very thick. Stir
well before covering and refrigerate up to 10 days. Makes 1 cup. 
Cook's Note: Ultrapasteurized (sterilized) cream takes considerably
longer to thicken than fresh cream.

Just Wonderful Lemon-Garlic Chops
8 boneless pork chops, 1-inch thick 
2/3 cup lemon juice 
1/2 cup extra virgin olive oil 
1 (4.5-ounce) jar chopped garlic 
2 tablespoons dried tarragon, crushed 
1/4 teaspoon paprika 
For marinade, in a small bowl combine lemon juice, olive oil, garlic and
tarragon. Place pork chops in a 1-gallon self-sealing plastic bag; pour
marinade over chops; seal bag. Marinate in the refrigerator for 6 to 8
hours or overnight. 
Drain chops, discarding marinade. Place chops on rack in broiler pan so
the chops are 4 to 5 inches from heat. Sprinkle the chops with a little
paprika. Broil for 5 to 6 minutes or until brown. Turn chops and
sprinkle with paprika. Broil for 5 to 6 minutes more or until chops are
just done.

Begin marinating the steaks a day ahead.
Cajun-Style Rib-Eye Steak
1 cup vegetable oil 
1 onion, thinly sliced 
1 tablespoon garlic powder 
1 tablespoon plus 1/2 teaspoon ground black pepper 
6 small rib-eye steaks, approximately 3 pounds 
1 tablespoon paprika 
1 teaspoon cayenne pepper, or to taste 
1 teaspoon salt 
1/2 teaspoon white pepper 
Combine oil, sliced onion, garlic powder and 1 tablespoon black pepper
in 13 x 9 x 2-inch glass baking dish. Add steaks to marinade, turning to
coat. Spoon half of sliced onion evenly over steaks. Cover and
refrigerate overnight. 
Prepare barbecue (medium-high heat) or preheat broiler. Remove steaks
from marinade. Combine paprika, cayenne, salt, white pepper and 1/2
teaspoon black pepper in small bowl. Sprinkle each side of each steak
with 1 teaspoon spice mixture. 
Grill or broil steaks until cooked through, about 8 minutes per side for
medium-rare. Cut each steak in half. Divide steaks among plates; serve. 
Makes 6 servings.

occasion, spend a few extra dollars to get a great cut of meat -- you
won't be sorry!
Big City Steak
4 tablespoons black peppercorns 
4 (4 to 6-ounce) lean beef filets 
1/4 teaspoon salt 
2 tablespoons butter 
1/4 cup cognac 
1 cup beef stock
1/2 cup whipping cream 
Place peppercorns in a resealable plastic bag and gently crush with a
mallet or the back of a frying pan; transfer to a plate. Season steaks
with salt to taste and then coat both sides with crushed peppercorns. 
In a large skillet, melt butter over medium-high heat. Add steaks and
cook until browned about 5 minutes per side or until cooked to your
liking. Transfer steaks to a serving plate and cover to keep warm. 
Pour cognac into skillet and boil 1 minute while stirring to remove any
browned bits stuck to skillet. Add stock and cook to reduce by half,
about 5 minutes. Pour in cream and cook another 5 minutes, stirring
occasionally. Pour over steaks to serve. 
Makes 4 servings

The Recipe 
My Mom makes a great Tuna Salad and come to think about it, I've never
ran a recipe for it. It's Spring! So let me spring it on ya! Let's do
it! 
Fresh Tuna Salad 
2 tablespoons olive oil 
2 fresh tuna steaks (about 8 ounces each) 1/2 cup finely diced celery 
1/2 cup finely diced unpeeled Granny Smith apple 2 scallions, thinly
sliced 
1/2 cup mayonnaise 
3 tablespoons finely slivered fresh basil leaves 4 good inner radicchio
leaves, for serving cups Toasted bread 
Heat the oil in a large, nonstick skillet over medium-high heat. Sear
the tuna on the first side for 5 minutes, until lightly browned. Turn
with a spatula and sear for 3 minutes longer or until cooked to your
preference. Let the tuna rest for 5 minutes. 
Flake the tuna into 1x1/2-inch pieces and remove to a large bowl. Toss
gently with the celery, apple, and scallions. Season with salt. 
Fold mayonnaise and basil into the tuna. Serve in radicchio cups with
toasted bread.

Shrimp & Rice Casserole 

3 cups cooked rice 
1/2 cup catsup 
2 cups cooked shrimp 
1/2 teaspoon tabasco sauce 
2 cups milk 
1 teaspoon Worcestershire sauce 
1 tablespoon butter 
Bread crumbs 

Preheat oven to 350 degrees. Combine all ingredients except bread crumbs. Pour 
into greased 
casserole dish. Top with bread crumbs. Bake for about 30 minutes.

No Depression Cake

It was the depths of the Great Depression. Several families on our block were 
receiving baskets of food from the welfare people. The grownups kept talking 
about it - Depression.

Hard times for everyone. But it was my birthday, and I was just a little girl.

My mother said there was no money for a gift or a cake. I sat forlornly on the 
front stoop and felt sorry for myself. Then Mama came out and sat beside me. 
"Remember, there is always hope. Come and see. I have a surprise inside for 
your birthday today!"

I ran in to find inside was the most adorable kitten with huge blue eyes. I 
immediately fell in love with it and called it "Fluffy."

Then I noticed a cake on the table with a candle on the top. "How did you do it 
Mama?" I asked, my eyes all aglow. "The kitten came from nice Mrs. Jones down 
the street.

She gave us the recipe for this No Depression Cake. When you bake it you can't 
be sad! Mrs. Jones said we must think of what we have on hand, not what we 
don't have.

We can always create something new and useful if we think positively. That is 
why it is called the No Depression Cake!"

Mama was right, I will never forget the happiness of that day. I took a piece 
of my birthday cake to Mrs. Jones to thank her.

I remembered the No Depression Cake when my own babies were little and my 
husband's dry cleaning business failed. To help him, I began a tiny advertising 
business on foot, pushing our children ahead of me on a broken-down baby 
stroller in the rural town of Baldwin Park, California.

Because there were no jobs, I asked the weekly newspaper to sell me space at a 
wholesale rate. Then I went out and resold the space in the form of a shopper's 
column to merchants.

When the rocks in the road wore out my shoes, I cut cardboard and stuck it in 
carrying extra pieces in my purse. Soon I had the house payment covered.

Then I spoke to service club luncheons to promote my advertising column. I had 
no car or baby sitter, so I made a deal with my neighbor. I traded baby sitting 
for the use of her car. Another helping of No Depression Cake! All of the 
business I run today, world-wide, began with that No Depression system.

As the children grew up we had many ups and downs. I especially remember one 
time when we had no money for groceries. I sat down with them and said, "Let's 
make a No Depression Cake! Let's see what we have on hand." My son said, "Mom, 
the avocado tree is full of fruit. I'll sell them today by the curb."

"There aren't enough oranges on our tree to sell," my daughter said. "I'll pick 
them, keep some for us, and take a bag to our neighbor to see if they'll trade 
for some of their great tasting plums!"

We all got busy. With the first avocado sales, I ran to the grocery store and 
bought day-old bread, a big bag of pinto beans, some brown sugar and powdered 
milk. Then I baked a No Depression Cake. We had a grand lunch, counting all of 
our blessings and thinking of all the good things we could do together.

By the end of the afternoon, our son had sold many more of the avocados, and I 
had a big bowl of beans bubbling and baking in the oven. Then the phone rang. 
It was one of my advertisers asking me to come over and pick up a big ad and a 
check.

Next time you're feeling low, try counting the good things you have on hand. Do 
with what you have. Bake up a positive-thinking No Depression Cake!

Here is the recipe. It is milkless, eggless and butterless. You can substitute 
other ingredients for any you don't have. The one thing this cake is full of, 
however, is memories of cheerfully creating with what is at hand and on hand - 
and never giving up hope.

Depression Cake

1 cup shortening

2 cups water

2 cups raisins

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

1 teaspoon ground allspice

1/2 teaspoon ground cloves

2 cups sugar
