A slightly different solution: I've been running LMS on a HP
Microserver, which also holds all my music files, for some years. I
installed Ubuntu Server as the OS on the Microserver. It works very well
indeed and I can install updates as and when I wish.

Microserver/Ubuntu, PC/Windows 7, iPad 4, iPeng, Squeezepad.

Can someone point me to step by step instructions for setting up this
way? I have an aging Windows Media Server, which still works, but at
some point will need to be replaced.

That's what I use and always suggest.  Especially if running LMS is it's
primary, if not sole, purpose.  Buy a used netbook for under $45,
problem solved.
No new OS to learn, slim, compact, quiet, wired or WiFi, simple to
remote access (if needed), very low power consumption, etc

I have been running LMS on Netgear Readynas for close to 10 years.
It originally was fully supported but since Readynas OS6, support ( much
like LMS today ) has been more community based.
It works and the debian packages of LMS are the correct version, but a
'shim package' put together by a readynas community developer is
required to make it work. There has not been any updates on that for a
while, but it works with 7.9.1 just fine.
There are many ways to run LMS, and if you need a nas for some reason,
they serve as a server/storage platform that does not require much
effort to run.

I am running my LMS with ~35.000 mp3s on my Synology 718+ and there is
fiddeling and tinkering needed.
There is an official package and also the option to run beta versions.
Both work without any issue since I have first installed it about 4
years ago.
Music is streamed through the house to about 5 different players (hard
and software) without any issue at all.

Although I like the pi approach don't forget that setting up a NAS will
give you a massive amount of additional functionality that you might not
want to miss anymore once you get used to it.

As others have replied, Raspberry Pi is a good option, you can either
install from scratch as it were with Raspian/Debian and download and
install all the necessary packages manually or use pre-prepared packages
from Max2Play or PiCorePlayer, both of these are easy to get up and
running and well supported by their authoring teams.

For QNAP NAS's Digimaster's (forum user) excellent work on his
QLogitechMediaServer QPKG has breathed a new lease of life into easily
running LMS on that platform, but only working on Intel x86 and x86_64
processors at the moment, he's hoping to expand that to Arm processors
soon, There's threads here and on the QNAP Community forum about his
QPKG.

I currently use an RPI 2B with Max2Play and it's very stable and not too
bad for speed, local music files are stored on a QNAP.
I'm also testing QLogitechMediaServer and I have to say it's quick,
although perhaps it should be it's running on a 4 core 2Ghz Intel
Celeron processor with 16Mb of RAM available.

Some nice choices out there at the moment - RPi, QNAP and Synology -
times are good!

To try and answer some of your other questions...

I use Mediamonkey, MP3Tag and MP3Gain to maintain my library of music, a
master copy is kept on my PC and then it is copied up to the NAS. Of
course these days I'm only adding the odd album, so I prep that by
checking tags, album art and applying track gain on the PC, then I copy
the folder for that album up to the NAS, pretty standard file structure
of Music/Artist/Album.

Updates to LMS - never run LMS on a PC or Synology so not sure exactly
what mechanisms for updates they utilise, On a Pi, I think if using
raspbian/debian on a manual install you can just use wget to download
and install the latest package, I think it's the same for PiCorePlayer
(details on the help pages at picoreplayer.org) Max2play offer an
upgrade/install LMS, with a drop down to specify which version, from
their Web based management screen plus the ability to specify a
downloaded file (so you can download the latest version for Debian from
the Squeeze downloads page and then tell Max2Play to upgrade using that
file).
QLogitechMediaServer, I think downloads and updates to the latest
version everytime it starts, you can change that behaviour though in the
config files.

I used to run LMS on a Zyxel NSA310 NAS, and then Spotify changed its
delivery method.
The NSA310 processor couldn't run the script for running Spotty (Michael
Herger's Spotify app), so another means of running LMS was required.
I eventually settled on a RasPi, with my local library still on the
NSA310.
It runs like a dream :D

Updates are a breeze to implement, and the really nice thing is that 3rd
party streaming services do not require the NAS, so it sleeps while I'm
streaming from Spotify.

Can't speak for other nas, but Synology still provides a package in
their Package Center. Its just a 1 click install. It runs pretty smooth
on all current models (some lower models do have limitations), and is
solid as a rock!

Synology does not update packages that much. They build new 'more or
less' up to date packages with a new major release of DSM, the OS of
Synology.

This is what I have been using for some time now, and it works well.  

I used to run LMS on a QNAP NAS, but I found updates a hassle to apply,
plus firmware updates sometimes made changes that meant LMS stopped
working and I had to poke around to fix it. Can't really comment on
other NAS devices.

1. Synology or QNAP but ..
2. You would connect you PC and map a network drive to the NAS e.g. M:\
and then point your software at the appropriate place on M:\ rather than
C:\

Although Synology and QNAP have LMS apps they are both only semi
official and may require some fiddling to make them work (and
subsequently keep tjhem update)
An alternative option is a NAS (any decent one) working only as a NAS
and a Pi3 with piCorePlayer installed in LMS mode - you then point the
Pi at the NAS for its music folders. Easy and relatively future proof.
Lots of info here in Linux/Unix on how to to set it up.

I have Logitech Media Server installed on a computer containing all my
music. Hence, my computer in the living room has to be on in order to
use LMS.
I want the music and program moved to a NAS, that I can move to the
ceiling in order to get rid of the sound.

Question 1: Some years ago there were a few NAS on the market with LMS
preinstalled, but which is the best solution in 2018/2019?
Question 2: How would You adress this library from any computer in order
to refine: MediaMonkey, iTunes, dbpoweramp ... or?
Question 3: Will updates to LMS function in the same way as on a pc?
