Most, if not all windows programs remember (in the system registry) the last
directory used by that program. But you can set your My Documents folder to a
specific location such as a mapped drive. Keep in mind that if working
collaboratively that all windows programs do not create lock files

can't help with all of your apps but the Microsoft apps (at least
the newer ones) usually have the capability to set your default directories.
It is usually in the setup or options configuration area of the apps
themselves.

Do you want to move the physical location of My Documents?
If so, right click on the My Documents icon on the desktop, and enter a
new path (to a new drive etc...)
You can also use the TweakUI Control Panel applet from MS.
