You might try rebooting your phone by holding down the sleep/wake button on the
top until it says "slide to power off", wait for twenty seconds or so, and then
pressing and holding it again to turn it back on. Sometimes I find this helps
after installing an app with a lot of features.

Apple does download the update to your phone. Then you have to approve in order
to install it. So it does remain on your device unless you remove it, at which
point I'm unclear as to whether it redownloads. But it won't install
automatically.

Go to Settings, then the Mail, Contacts, and Calendart area and double-tap it.
You'll find a list of your mail accounts. Double-tap the one you want to
modify. At the top of this screen is a button with the name of the account.
Double tap this, and you'll find your mail settings here
