Store to get it thoroughly diagnosed to see if it has a problem with the
hardware.

In my opinion the Logitech K780 is the best fit here, it's pretty compact, has
a numeric pad and it can pair with up to 3 devices.
The two drawbacks are its weight and the fact that you have to install Logitech
Options to use it effectively with a laptop and it's a pretty inaccessible
install.

I find it very annoying when I slip my phone in the pocket or shake it
accidentally, while using native email app. I get the message undo read or
undo trash. Is it possible to disable this option.

I’ve done all of the above.
I even have a network extender that connects to my Wi-Fi.
I just can’t figure this out.
I’ve called Apple Accessibility and I’ve called Verizon as well.
However I can’t seem to stay on the call scoring enough to diagnose it.

Have you checked your cellular bars at the top of the screen?
If they drop to 1, you likely will not be able to stay on a call.
Or, have you called either Verizon customer service, or Apple Accessibility to
try and sort out what is happening?

Yes, you can disable it in Accessibility > Touch.
This is another example where, as often before, I recommend to remember that
the iOS Settings app has a search feature right at the very top.
If you type "shake" into that search box you find one single setting, Shake to
