If you like almonds, try raw almond milk as a substitute for dairy.  So
simple--just blend up some raw almonds with good water and strain out
the almond residue (I use small muslin bags).  You can run the residue
through the blender 3 times, using lesser amounts of fresh water each
time, before getting all the good out of it.  Bottle and
refrigerate--absolutely wonderful in coffee, sauces, etc.
