On OS 8/9 there's EIMS and WebSTAR Mail (W* Mail is problematic by all
accounts). Stalker also used to have a commercial messaging server for OS
8/9 called Communigate Server (a different product than Communigate Pro),
but I don't know if they still sell or support it. None of these are free
like SIMS.
On OS X, for SMTP sendmail, exim and postfix come to mind immediately. For
POP/IMAP, uw-imap and Courier imap. These are all open source. On the
commercial side of the street there are Communigate Pro and Tenon's Post
Office. I'm sure there are others in all categories, this is just what
comes off the top of my head.
