How does Ubuntu Server + Desktop Packages differ from the Desktop Version 
itself? Is there a page somewhere that describes this? I'm sure that there is 
more than one person who has been bitten in the bum in regards to this.

At the console, aptitude is your best friend. I've used it to solve dependency 
problems that give apt-get and synaptic seizures. It works well in 
command-line mode, but if you run aptitude on its own (no options) you get a 
curses interface.

I hate to burst your bubble, but CC does not meet the free software

The main problem is the "Attribution" clause, which is not supported by the 
Free Software Definition since it imposes a restriction. IIRC, the original 
BSD Licence had a similar problem.
