You should enable the universe and multiverse repositories.

Using distro-provided packages is not about using your system as a 'toy',
it's about avoiding the integration and testing hassles associated with
building stuff from source. But at times there are good reasons for not
using packages - building a very fresh mythtv from svn is possibly one of
them.

Definitely, but like any new tool, you need to learn a few basics to be able
to do the harder stuff. It sounds like you had trouble finding out about the
apt-* toolchain, and which packages will help you to build a particular
piece of software. That is stuff we can help with - your best bet is to ask
specific questions (with info/errors from the computer)
