The medieval belts I've seen had metal coverings at both ends, riveted
to the fabric.  That seems to have been the standard way of attaching a
buckle as well as protecting/decorating the ends.  See for example

A simpler method is to get a point with a slot at one end through which
the belt can be threaded, turned back on itself and stitched fast.  The
belt here http://www.guntram.co.za/tabletweaving/index.htm is done that
way, though you can't see the method of attachment very clearly.  You
can find sime really nice medieval pieces on the web; try for example

The simplest way of all is to work the weft back into the belt when
you're done (or use a needle to stitch it in), cut off the warp, and
leave a fringe of whatever length you like.  Actually this doesn't look
bad at all.  If you want to be more inventive, you can leave a
sufficiently long fringe so that you can braid the ends.
