This makes sense to me. The destination folder does not exist any
more, so it is set back to default: The Sent folder. WAD.

The filter is not deleted, so you are now copying the mail from the
Sent folder to the Sent folder, that;s why you end up with two copies.

No, it doesn't. It just sets the destination folder to the default.
Same with Incoming filters: I have a lot of Move filters. If the
folder is deleted, the mail will be "moved" to the Inbox. That's
perfectly correct behaviour.
