Hm. I have no further ideas.

I hadn't looked at your email address earlier and didn't notice that
you are using Yahoo.co.uk. That seems to rule out the SMTP server,
while the fact that others can send to the list in other encodings
than us-ascii seems to rule out the list server. Short of MI5/MI6
being at work, I really don't know what can change the encoding.
