There isn't a lot of good user documentation that is step-by-step on how to accomplish things. When I first started using Tiny/OpenERP I first learned how to backup and restore my database. Then I just went about trying things and watching the results. If I did something wrong or results looked weird I just restored the database and tried again. Don't be afraid to make mistakes. Just plow ahead and when something goes wrong, either restore the database to a known good point or create a new database and start over. I would perform some action and then use SQL in a terminal to look at what it put into the tables and so I eventually learned some things about how the system works. So first I would familiarize myself with backing up and restoring databases and then you will feel more comfortable at trying things. It won't take you too long once you just go about experimenting.
