Tipspals,
I have to agree with Louis on this one. If people hadn't cut me some (minor) slack on a couple deadlines over the past few years, given how busy and complicated my life has been, there are some professional accomplishments that I would now not be able to list on my CV. Maybe it is the case that I did not even deserve the consideration, because my lateness would certainly be related to my own bad planning and tendency to bite off more than I can chew, but I got it. I would be a hypocrite if I did not keep this in mind when dealing with my students.
I think that in the "real world" most reasonable people work on a case-by-case basis, and that one thing that happens as we mature as teachers and professionals is that we begin to get a better sense of who has been working hard and has perhaps a legitimate reason for being late to meet a deadline (because "s--t happens") and who has been slacking and is trying to manipulate us. We don't become mind-readers, but we figure out fair ways to sort the diligent ones out from the the rest.
