That's because the output isn't a stream of 1's and 0's - it's a
high-frequency analog signal representing square waves which in turn
represent 1's and 0's. And even worse, it includes timing signals which
need to be precise in the picosecond range. Being an analog
representation of a square wave, rise time, overshoot, jitter (how
precisely the embedded clock is recovered is recovered), impedance, and
other signal characteristics can influence the "quality" of the digital
output.
