I can chime in my thoughts, so be gentle.  I run a server separately
with 6.5 TB of storage on an old AMD machine, basically a bunch of USB
HDDs plugged into an old computer running Ubuntu.  I don't have any
problems with that setup because I use the server software (which is
awesome by the way).

I really think that the USB would be for when friends come by and plug
in a usb stick to let you hear some stuff, or of not much use at all. 
I would gather the processor in the Touch itself would be low powered
in capabilities.  Do you have a spare computer that you can keep on in
your home network instead, and run the server software on that spare
computer?  That's really the most optimal experience.  I also use FLAC
strictly as well.

Just chiming in my idea on that.  I've read a lot of people have issues
with external hard drives connected directly to the touch, that's not
really the best way of using the device.  To unlock its full potential
you should install the server software on a spare computer and connect
the touch to that server software on the spare computer through your
home network.
