I can chime in my thoughts, so be gentle. I run a server separately with 6.5 TB of storage on an old AMD machine, basically a bunch of USB HDDs plugged into an old computer running Ubuntu. I don't have any problems with that setup because I use the server software (which is awesome by the way).
I really think that the USB would be for when friends come by and plug in a usb stick to let you hear some stuff, or of not much use at all. I would gather the processor in the Touch itself would be low powered in capabilities. Do you have a spare computer that you can keep on in your home network instead, and run the server software on that spare computer? That's really the most optimal experience. I also use FLAC strictly as well. Just chiming in my idea on that. I've read a lot of people have issues with external hard drives connected directly to the touch, that's not really the best way of using the device.
