I think I have understood my misunderstanding ... :-)
No decoding on NAS, just a transcoding to one format to another format
in LMS side.

Touch player decodes the file format to convert a binary file to a flow
which can be sent to the spdif interface. This spdif flow cannot be
produced on NAS server because it is not a binary flow that can be sent
to the local network. 

I was sure the spdif flow corresponded to the PCM format but it seems
PCM is just another audio file format.

So, there is a last point it is not clear. For example below, which
diffusion will be used by Touch player to create spdif flow ? 
WAV format :
FLAC -> flac/sox
MP3  -> lame
PCM  -> Natif
