For me it's easier to work at document level, as lines are more

Imagine the following use case:

- - An opportunity for selling a Laptop is created for party A.
- - You convert the opportunity to a sale and before accepting the sale
 the laptop customer calls you that also wants a keyboard and a mouse.

If we work at line level the opportunity must be modified, the
previous sale canceled, and create a new one.

If we work at document level you can create a new sale and cancel the
previous one.

Working on line level you lose the original opportunity (the one with
one laptop) as you have to create it with the keyboard and the mouse.
Working on document level you have the full history (One opportunity,
Two Sales)

I can understand that you can say: "Duplicate the opportunity and put
also keyboard and mouse", but IMHO that's wrong, as you never had two
opportunities with this party, you only had a opportunity to sell a
laptop that finally converted to two sales:
- - One with a laptop (cancelled)
- - Another with the laptop, the keyboard, and the mouse (accepted).
