I've never installed the Server version, I always use the full desktop.
And then just check the checkboxes for additional stuff like samba,
mysql, etc.

I strongly recommend installing the GUI/desktop, at least for initial
setup, admin and debugging. It makes life easy. And you don't have to
use it later.

Disclaimer: I run Debian (Ubuntu's father) on my servers, I don't need
all the consumer stuff (video movie players, etc.) and eyecandy that
comes with Ubuntu, so Debian is more suited for what I want a server to
do. My laptop (used for typing this message) and desktop are Ubuntu
