Without alsa-utils you'll miss some IMO mandatory features.

alsa-store.service/alsa-restore.service are called. 

These are just calling alsactl store/restore as oneshots.

Then there is a udev rule that restores the config as soon as the a
specific device gets recognized.

/usr/lib/udev/rules.d/90-alsa-restore.rules

And that's about it.

The question that's left is - where is the default parameter
configuration file/info of your particular soundcard that got to be
loaded?

Under /usr/share/alsa you won't find a lot of stuff.
