How about disabling the .service & udev-rule at first-boot? 
This way there shouldn't be any impact by the alsa-utils anymore and you
won't have to fiddle around 
with the package.

We shouldn't forget. Alsamixer also enables outputs (e.g. SPDIF), sets
sample rates,..... For same DACs its mandatory to have it installed.

I've seen the 75% default setting. I do suspect that the 75% is not
always 75%. 
It'll depend if it matches the firmware settings.
E.g. The AQ Dragonfly starts barely audible, as far as I recall it.
