I've got my VU meters changed successfully. 
I used filezilla (thanks for the tip, so much easier than cmd line !!)
to navigate to 

/opt/jivelite/share/jive/applets/JogglerSkin/images/UNOFFICIAL/VUMeter

where I found all the vu meters used in picoreplayer. 

The default one is vu_analog_25seq_j.png and the one I wanted was
vu_analog_25seq_d.png
So I renamed vu_analog_25seq_j.png to oldvu_analog_25seq_j.png and
renamed the vu_analog_25seq_d.png to vu_analog_25seq_j.png  
Rebooted the joggler and it all worked. Is this the way you meant? I'm
happy to use filezilla to change the meters if I want to change them
again. It's quick and easy once you know what you're looking for.

I knew it had worked without even looking at the joggler. I heard the
hiss/crackle/static noise. I left it for a minute or 2, I thought maybe
it will be static on each new image of the new vu meter. It was all gone
on a reboot again. This is still with me using the internal speaker, but
with a plug in the earphone output. I have the volume synced, so it is
usually around 80-90. But no sound at all has come out of the speaker
during normal use. Just the static, which I'm not convinced is even
coming from the speaker. I think of it like a warning to let you know
you've made some significant changes. It's not too happy about change,
and hisses it's displeasure, but after a comforting reboot everything is
right with the world.

This all worked as expected. Thanks a lot. Although I didn't get any
hissing, i felt like the joggler may have frozen and was displaying
unexpected screensavers for a few times. But I let it settle down into
the new settings for 10 minutes or so, gave it a reboot and everything
seemed great. 
In the daytime the screen looks off with blank screen. So I'm crossing
my fingers I won't notice it in the dark.

Did you manage to find out whether it was safe to pull the power out
without shutdown?
