I have an account with Zen Internet <http://www.zen.co.uk> and can serve no problem. In fact I serve for a few of my clients too and occasionally a server. You will save yourself a lots of headache if you go for their 'Office 500' package which is �60 per month but you get a router, 5 static addresses and 20:1 contention ratio. It is a bit more expensive but you do not even need to set up a NAT.
I run Mac OS X Server on a 7600 upgraded with 233MHz 604e from 9500 I believe, with 304MB RAM. The speed is very acceptable, even for database stuff. I haven't tried QuickTime. It should be possible to do the same with a 'client' version of the OS but go for a server because of some additional stuff such as WebDAV, mail server, NetInfo etc. It's just easier to set up (well, for GUI guy).
