While I find hand whipping much faster, I am "blessed" with dry, often calloused large hands. If I am to whip by hand, I need hand lotion and a bit of sandpaper first or I tear the thread. I use a Matterelli or Renzetti (are these guys Italian?) most of the time. I don't quite use them exactly as advised, but the heads are coming out much better since using variations of the directions.
