Canoe fishing is awesome-have fished for trout, grayling, northern pike, and panfish from one and have never had any problems (both moving and still water). What is really cool is that it is extremely portable and you can get into spots that others can't reach easily. I just picked up a used 17 foot aluminum canoe for $225, adding to the 14' canoe with a transom mount. Both styles are excellent for lake fishing.
