Maybe everyone missed this.. Seems to answer it pretty well for me.

Also, I might point out that at the Pittsburgh conference we all saw it
running on windows machines. For that matter, at the MacWorld booth, we were
showcasing a Witango-backend video project running on a Sony Vaio .. at
MacWorld!! Plus there was a Windows server hidden behind the
scenes...although the Vaio was served by a TiBook.

And further, we emphasized that development could occur in a Mac or Windows
machine and the server deployment was Mac, Windows, or Linux.

Just cause your machines are ugly :) doesn't mean they won't be supported.
