The reason of the use of the handshake is the synchronisation of the data exchange between both sides. CAT is a data exchange, therefore a suitable form of handshake is necessary. Only in the case of a duplex data flow of independent data streams, the handshake is not necessary.
Not using any handshake on an interface which has the ability of handshaking is bungling. You have to work with timeouts and resending data in the hope that the other side will be ready to accept and decode them well. Really, avoid this in any possible situation.
