I think that what I would do if I wasn't sure how well threads would cover
fabric, is take a scrap of the intended fabric (or work at the very edge where
it won't matter anyway) and just try some stitches with two strands and with
one. I get the feeling that you will likely be happy with 1, but may need 2. 3
will, as you have suspected, be too bulky, I find 3 to be too much for
anything over 14 count (and sometimes not even then).
