The first thing you will need to do is to have your wife's display calibrated as best possible (should probably purchase a color calibration device and software), put tape over the buttons/knobs so the settings are not lost, and create an ICC color profile which accurately describes the display.

Since specific colors are required, some special Pantone display calibration may be required so that it is possible to select the specific Pantone colors, and they still produce the correct colors on the display without use of the display's color profile (to the best of the display's capability).

As far as I know, the GIMP does not support display profiles for interactive use. As was discussed a month or two ago on this list, Linux doesn't yet have a standard set of tools to support a managed color workflow so you would need to cobble one together from various tools, and establish a procedure which creates reproduceable results. You are facing challenges under Linux which do not exist under Windows or MacOS.
