I just opened the template, re-saved it as an *.odt file, and started
working on it. Does it behave the same way as if I'd created a new file from
that template?

Yes, very good point. In the case of moving to the new template from the 
old one, it's essential to start a doc from the new template and then 
paste in old content, because although styles can be updated in various 
ways, the new cover page and copyright page boilerplate won't replace 
the old one if you import styles or use the Template Changer.

The Template Changer extension doesn't have that problem. It did in an 
early version, but has been fixed. For many purposes (where only styles 
are involved, not title page design and graphics), Template Changer is 
absolutely wonderful!
