More info: the OOo heading styles in the old (2.x) template have
different names from the OOo heading styles in the new template, so
you need to do a search-and-replace to change them after you put a
chapter into the new template. Same for paragraph styles for lists. In
fact, most of the lists used to be in OOoTextBody with
manually-applied list styles; now they use proper paragraph styles for
lists -- and therefore they all need to be changed in the file when
converting it.
If you're not familiar with both the old and new templates (and there
is no reason why you should be, at this point), it can be quite
confusing to update an v2.x user guide file to the v3.0 template,
because you won't know what to look for. We haven't written a how-to
on this, because up to now the few people doing conversions have been
familiar with the discussions on the new template.
It's very fiddly at first, until you get used to it. If you find doing
the conversion too frustrating, you're allowed to just concentrate on
updating the content, adding new content, or whatever is needed, and
one of us can tidy up the template issues. Of course, if you can do it
all, that's even better.

While discussing more gotchas... Try not to import styles into current
or older documents. Use a new file created off a current template
instead. Then paste the older content into a new file.
Doing the former erases the ToC outline data and formatting. [The
original ToC will go Poof! after the first ToC update otherwise.] If you
ever import styles, then you must go to the Tools > Outline Numbering
menu and reinstall the headings again. IOW--a bitch.
