Shaun, thanks for your input. You've left me with some other alternatives to consider.
One other method that comes to mind would be to place a blind filter in the p/f and remove the allen wrench bolt on the "bridge of the nose" of the E61 thermoblock. I can insert a probe in there, which due to its location will probably reflect temps somewhat close to brewing temp, though perhaps a bit higher.
