I low carbed for over two years, losing about 50 pounds.  I did countless hours of research and was involved with some leading experts in the field of nutrition - both pro and anti low carb.  For people with healthy kidneys low carb is not harmful.  Those with kidney problems should probably not low carb.

I have some suggestions:

First off, throw out that piece of garbage book by Atkins.  Its a dishonest, unscientific piece of crap.  The best low carb book I can suggest would be "protein power" which explains how low carb really works without implying its magic.  Another extremely scientific book is "the ketogenic diet" by lyle macdonald.  

Basically, low carb works by keeping your insulin from spiking, which can cause hunger binges.  Fat keeps you fuller for longer and so you eat less.  Its that simple.  It can also help build muscle mass which will increase calorie burn.
