I currently file share using my Mac 512 under OSX by booting up under OS9 which handles AT just fine. It's not that big a pain in the ass as it sounds, though I'd prefer not to have to do it of course and you may not be using Classic at all. In your case floppies may be the best way to transfer text documents. In my case, I use it to set up the system and transfer files without having to deal with formatting 400 & 800k disks -- a much bigger pain in the ass with modern computers. If you use Classic under X, you might consider this just to transfer files for setting up your Classic II which has to be faster than transferring files 1.4MB at a time.
As for what you want to run on it, I basically have had to decide what I want to do with my Classic Macs and find the appropriate system to accomplish it. Any pre-PowerPC is not going to run anything close to what we are used to running on modern Macs and if they will, it won't be fun. If you write on Word 5 and don't want to consider an earlier version, then you don't really have choice but to upgrade to System 7 if it doesn't run under 6, and while 7 definitely runs slower than anything under 6 on these Macs, I doubt you will see it just Word processing, unless you install a bunch of background apps that drag everything down. BUT, Word 3 is a great program that runs under 6 -- If you personally don't have a use for it, that doesn't mean it's not a good choice for someone else. OTOH, if I understand what you are saying, almost any application you do find useful under OS 7,8,9 & X is going to run very un-usefully slow on the Classic II running 7.
