I never have made Italian sausage, and do not keep fennel at the house; I
was saying when I purchase Italian sausage, I want plenty of fennel in it,
whether mild or hot sausage.

I used to take it out and mix it with ground beef when doing meatballs or
an Italian meatloaf; love it with tons of fennel; many do not care for the
fennel, but to me, the more, the better the sausage tastes.

remove.
Italian sausage does come in bulk form. That would be what you want.
