My preference is either a chili grind of sirloin or venison, along with half
again a mild or bold pork sausage -- wild boar works well too.
And though I can eat rather hot stuff, I tend to prefer my chili less fiery
so I can taste the spicing without the extra heat in the way.

No beans in mine, either.  Authentic chili has no beans in it.  You can use
any kind of meat in my recipe, but I really like it with Venison burger.
